Canario comes from the house of Fazenda Soledade in Rio state, a Brazilian family enterprise established in 1827, and has been producing premium cachaça ever since. Canario Cachaça is produced using the elaborate, and for cachaça unusual, method of double distillation in copper pot stills. Only fresh sugar-cane juice is used for producing Canario Cachaça. The sugar-cane fields lie at an altitude of 800 m in the mountains of São Fidelis. This region is famous for its individual and specialised cultivation of sugar-cane. After around one year of growth, the select, fresh sugar cane is harvested by hand. The heart of the sugar cane is carefully separated from the rest for the distillation process and pressed to produce sugar-cane juice within 24 hours. The importance of the pure, clear, soft water from the distillery’s own well for both the fermentation process and the ultimate quality of the product should not be underestimated.
Canario Cachaça has the characteristically fresh, yet subtle flavour of sugar cane and a pleasantly mild, pure and harmonious taste.
Probably the most famous and most popular drink containing Canario Cachaça is Caipirinha, an exciting blend of cachaça, crushed ice, limes and brown sugar. Canario Cachaça can also be used in the typically Brazilian batidas, for which fresh tropical juices or fruits are blended or puréed according to taste and mixed with plenty of ice and, of course, Canario Cachaça.
