The philosophy at Champagne Bouchard is considered revolutionary - Cédric bottles only single vineyard, single varietal, single vintage cuvées. This is an unusual concept in Champagne, where blending to achieve consistency is the norm. Because of this the wines have great individuality and character, varying from year to year with each expressing its single vineyard nature. Every wine is made from first press juice, and fermented with indigenous yeasts. Biodynamically run but not certified.
