Limit: One bottle per customer

 

Dates harvested: Sugar level (Brix): 21 – 22

Alcohol: 12.6%

8&9th April. Harvested by hand with rigorous selection

Total Acidity: 5.6g/l

pH: 3.63

Vinification: 91% destemmed without crushing, cold soaked for 3 days. Fermented in open

stainless-steel vats with pumping-over and hand plunging, total period of

maceration for 30 days. Aged in French (17% new) oak barriques for 24

months. Unfined and bottled after coarse filtration.

Bottles produced: 1,728 x 750ml, 15 x 1,500ml

Remarks: Very warm and wet spring. A patch of bad weather at the flowering resulted

the poor fruit set, causing big crop reduction. Summer was warm/hot but

regular cold breaks in February followed by dry and mild March, which kept

the balance of freshness & ripeness. 13.5hl/ha.
