This junmai-shu measures +18 on the Japanese sake scale making it super-dry at face value. However, it carries an umami that blooms in the mouth, giving the sake a gentler flavour profile.

Pair with lighter flavours like sushi, sashimi, panko-crumbed fish or chicken, or as a palate cleanser with fried foods like tempura, or karaage chicken.
