Winemaking: Organic Xarel Lo, Macabeo and Parellada grapes were harvested by hand. Fermentation with indigenous yeast in stainless steel tanks. Bottled before fermentation was complete in order to create fizz in bottle (ancestral method, pet nat). No fining, filtration or added sulphur.
This Wine: A sparkling, natural wine made from the 3 classic Catalan grape varieties historically used in Cava production. This is a different method though which results in a lighter and fruitier wine. The name means "Thirsty" and a bottle of this exactly what you need when in that state. Easy drinking and more-ish with notes of apple and lemon.
Notes on the Winemaker: Ramon Jané is one half of the esteemed Cava house Mas Candí but this wine comes from his solo project that he started in 2019 which promises some of the best value natural wines of Europe.

Mas Candi is Ramon and Toni’s visionary intellectual oeuvre, both defining and setting the bar for the best of postmodern Penedès. Viticultor Ramon Jane is the soul of Ramon: contemplation, birdsong, observation. They also both come together to make some of the most exciting new classics of Penedès. They pushed the envelope in the mainstream, and now they push it in gloustream, together and separate.
