Sémillon
Sémillon is a versatile white grape from Bordeaux in south-west France, where it's the backbone of the great sweet wines of Sauternes and Barsac and is often blended with Sauvignon Blanc in dry whites. It makes wines with lemon, lanolin, beeswax and waxy citrus when young, developing toast, honey and nuts with age, and Australia's Hunter Valley is famous for its low-alcohol, long-lived examples that can age for decades. It's also grown in South Africa, Washington State and Chile, and is a good match for roast chicken, rich seafood, creamy sauces and, in its sweet form, blue cheese and foie gras.
