Aged exclusively in a first fill ex bourbon barrel our award winning rum (Cane Overproof) has taken on new depths and flavours. Bottled at the perfect point in time to still capture the banoffee notes created during fermentation while showcasing the vanillas and caramels from ageing on oak. This single cask release, is non chill filtered, has no added colours or sugars, because we believe in preserving the authenticity of rum.

 

A DREAM TURNED INTO REALITY…

 

It all started 8 years ago while working in the sun soaked Caribbean drinking rum. Unfortunately at time rum was not produced in New Zealand. After 3 years of research and 5 years of trail and error we are proud to release “Cane” an un-adulterated over proof white rum.

 

WHAT IS AN UN-ADULTERATED RUM?

 

Unfortunately the rum industry is rife with scoundrels looking to flip a rough product into a quick buck. One form of rum adulteration is sweeting. Sweet can hide a magnitude of sins, it’s not hard to find an example of sickly sweet rum on the shelf.
Unfortunately its not uncommon for a unique spirit will all sorts of nuance and character to become quiet generic with sweeting. Or that a rather flawed spirit can be ameliorated. This is important because a trained bartender should be the one deciding how sweet there cocktails should be, and or what the consumer would like to sweeten their drinks with.

So why take the control away from the consumer our job so be to produce the best pure rum possible and let the consumer experience the nuances and character that makes it “Cane” Rum award winning.

 

WHAT IS INSIDE YOUR BOTTLE?

 

First and foremost you cant have Rum without sugar cane. Now this poses some challenges as cane is not grown commercially in New Zealand, so how do we overcome this….

For starters, we use different combinations of real boiled brown sugar from Mauritius (not the fake raw sugar you find in the supermarket) and grade A molasses from Australia. We combine them with yeast nutrients and water before fermenting low and slow, from 4-12 days; far longer than a typical fermentation in the Caribbean. By going slower the yeast creates fewer unpleasant tastes in the wash.

We then distill on our 1800L hand built copper pot still, its short and fat design allows us to develop a fat oily spirit that coats your mouth while developing deep rich flavours.

It always starts with a dream. For Soren Crabb, the dream of creating his own brand of spirits, was born out of a passion for Rum and Gin. Settling into a distillery in Auckland, Soren set out to create a product that embraced New Zealand's rich history, which can be found in the company name, the botanicals he uses, and the bottle design.

Named after the year in which New Zealanders stood up for their (drinking) rights, 1919 Distilling was born. Using New Zealand's finest botanicals including home-grown organic oranges and lemons, Otago Cherries, and Manuka Honey, they've created a truly unique, world class gin.  More recently 1919 have also released their first whisky, distilled in 2016, bottled in 2020.
