Botrytis or Noble Rot

Botrytis Cinerea is the name of the rot (also lovingly known as Noble Rot) that is behind the sweetness of many of the world's most loved sweet wines. It causes the water in the grapes to evaporate out and concentrates the sugars and flavours causing all sorts of goodness.
