Roaster's Comment:
When we first launched the Ethiopia Dega washed from Guji, it set the bar high and left a lasting impression of just how special this variety can be. Now grown at high altitude in Yirgacheffe, I expected great things and this coffee absolutely delivered. This time it is red honey processed, adding extra depth and complexity compared to the washed version.
What I love most is the tea like texture and the gentle floral notes that really shine through in the cup. Fun fact, this coffee was not easy to crack. It took a lot of trial and error to dial in the roast, with a very narrow window to hit the perfect flavour balance. When it lands though, it is incredibly rewarding.
