Roaster's Comment: This Guji washed Dega (variety) is subtle and elegant, with a well-balanced acidity. Its light, crisp finish enhances the clarity and grace of the flavour profile. The floral note is present beautifully from hot to cool - just as you’d expect from a classic Ethiopian coffee.

This exceptional lot originates from Raro Kello, a district within Uraga in the Guji Zone of Oromia, Ethiopia. It has been meticulously prepared on raised African drying beds under the careful supervision of the dry mill manager.

The Raro Kello wet mill, owned by SNAP Specialty Coffee, receives only fully matured cherries, which are picked with great care. Once delivered to the mill, the cherries are sorted by a team of committed women workers, ensuring only the best cherries are selected.

The coffee is then sun-dried for 17 days. After drying, the cherries rest for 2 months in a warehouse to stabilise before being milled and transported to Addis Ababa for final export processing.
