Haute Cabrière Ratafia is made from Chardonnay grapes, with fermentation halted by the addition of a brandy distilled from the same grape. This process preserves the natural sweetness of the grapes.
Tasting notes: A fortified, full-bodied sweet wine with hints of fresh limes, tropical fruits, and rich honey tones. Oak aging can introduce vanilla and spice notes.
  • Production: It is made by blending Chardonnay grape must and Chardonnay brandy. Haute Cabrière is one of the only estates in South Africa to produce a Ratafia in this manner, honoring its French heritage.
  • Alcohol content: Typically has an alcohol content of around 18% to 20%, though different vintages can vary.
