ELABORATION

COLD PRE-MACERATION FOR 4 DAYS. FERMENTATION WITH INDIGENOUS YEASTS AND CONTROLLED TEMPERATURE BETWEEN 15 AND 22 DEGREES. SELECTION TABLE. GRAPES WITH STEMS 35% AND DESTEMMED 65%. MACERATIONS OF BETWEEN 20 AND 30 DAYS DEPENDING ON PLOTS AND TANKS. GENTLE EXTRACTIONS BY PUMPING OVER AND DELASTAGE.
