Winemaking:
Hand-picked and whole bunch pressed into tank to settle overnight. Transferred into old neutral puncheons for a long wild fermentation. Full malolactic fermentation and matured for 12 months before bottling.
Tasting notes:
Crisp and refreshing. This is a bone dry and mineral Chenin with a rich briny texture. Tropical stone fruit, rock melon and honey dew on the nose with racy acidity and a saline finish. Crisp, refreshing with body and texture to keep it balanced.
