 AROMA:

 Lovely intense dark cherry, wild forest berries, toasty baking spices with complex savory undertones.

PALATE:

The palate flows from fruit purity into more savoury and complex flavours. It has silky tannins, great fleshiness and depth, elegance and balance.

The fruit was hand-picked at 3 different dates to ensure optimum ripeness across the different Pinot Noir clones (667, 777, 115,114, Abel). The grapes were destemmed and gravity fed into open-top fermenters. The juice was   inoculated with yeast from ‘The Wrekin’ vineyard. During fermentation a mix of gentle hand plunging, and pump overs occurred. After 18 days on skins the wine was gently pressed and transferred to French oak, where it aged for 14 months. The wine went through 100% malolactic fermentation in early spring before blending and bottling.

Indigenous vineyard yeast fermentations are used extensively in Sorrell wines to build on the flavour profile, structure and intensity of mouthfeel but, more importantly, to make that connection to place. 

This minimal manipulation of the final product allows an authentic interpretation of the soil, vines and season to shine through humility and dedication to achieving the purest wines possible.

We work on a smaller scale which allows focus on every single step, from selecting the perfect parcels of land, fostering relationships with the growers, hand-picking grapes and tasting every barrel. This commitment ensures the ideal characteristics for the wines we want to make.

They're proudly cool climate wines, aged in French oak, with a lovely line of pure fruit, subtlety, and elegance. The pristine fruit and refreshing acidity give them restraint, allowing them to age beautifully.
