Quercus Alba is the LaIn name for ‘American white Oak’ and this limited ediIon whisky is packed with oaky flavour. During the selecIon process our head disIller said ‘this one’s for people who like chewing on a pencil’. The heavy char on the virgin oak cask has acIvated rich tannins, dark toffee and deep wood flavours. We think it’s reminiscent of the heavy tannic oak notes in American whiskies. If you love oak, this release is for you.

The liquid inside is Manuka Smoke single malt, one of our most idenIfiable flavour profiles and a signature of our disIllery. It’s made using locally grown malt that has been smoked with naIve Manuka wood, mashed, fermented and then double disIlled through the Thomson all copper pot sIlls. The spirit offers an interesIng black tea note along with the typical Manuka oils.

Cask: Heavily charred virgin American oak barrel.
Liquid: New Zealand Manuka Smoke single malt.
TasIng notes: Vanilla, Black tea, clove and Manuka oils. Rich tannins, dark toffee, deep wood. Headcount: 250 boLles only – limited ediIon.
ABV: 46%
Volume: 700ml

Thomson love what they do; making craft whisky for the modern enthusiast. After a few years mucking about on a home still and learning as much as we could about whisky  they began the Thomson Whisky project as Independent Bottlers. They got hold of a few barrels of aged single malt from Willowbank Distillery, Dunedin, carefully selected to their personal tastes, to launch under the Thomson name. They started telling people about their whisky, sharing a drink with friends, then bartenders, and shops and people travelling overseas and their project started firing. A few years down the road and things have changed a lot. They are now distilling themselves like mad out in West Auckland.
