This is our ultimate blend and is only made if the vintage is good enough. Made to showcase the “King of Grapes”, Cabernet Sauvignon, this wine is crafted from grapes grown in the best parts of our vineyard and with the lowest number of grapes per vine. 2015 was a cooler spring and early summer than usual but by mid-summer the heat that Cabernet needs really kicked in. 2015 is the first vintage to proudly show off a new look. Bold, fragrant aromatics of sweet blackcurrants, crushed dried herbs layered with tobacco, cedar and cinnamon bark. On the palate there is sustained flavours of cassis, dark berries, spice, cocoa and graphite. Well knit, lacy tannins dance on the finish that will soften further with careful cellaring. Decant before serving.
Unison Vineyards
Unison Vineyards is the pioneers of the Gimblett Gravels region of Hawkes Bay planting back in 1993 – back before it was designated to be the winemaking hotspot of the country. Now it is managed by Philip and Terry Horn who have continued the success of the stellar winery and stay true to the initial inspiration for the vineyard. It was the free-draining gravel soils that the founders of the vineyard were so attracted to in the Gimblett Gravels, as they had worked in Tuscany for many years prior and knew just how crucial they were to Chianti’s success.
Bordeaux Red Blend
This is the most famous red blend of them all: Merlot and Cabernet Sauvignon. Just like in Bordeaux, where this blend originates from, you will almost always see Cabernet Franc, Malbec and Petit Verdot in the blend, too. Each grape brings its own special element to the overall wine be it acid, tannin, colour or aromatics.
