This limited-release gin liqueur takes inspiration from Japan. Based on traditional Japanese umeshu, this liqueur has been crafted using our Garden Gin as a base and steeping New Zealand-grown green ume fruit and red shiso leaf for several months, along with rock sugar to balance the tartness of the fruit and the herbaceousness of the shiso.
This umeshu has a delightfully rich flavour, with lifted florals, almonds, apricots, and red-boiled candy notes. We have used NZ-grown Nanko ume, highly prized for its thin skins and intense flavour. It is excellent on the rocks, with soda water, or a cocktail.
As this is a natural product, sediment may occur and colour may change.

Dr Beak gin has been lovingly crafted and developed by Lacey, along with her winemaker husband, Tim.
Lacey, a mother of three, and a Health Science graduate, has been asking herself for the last ten years, “What will I do when I grow up?”
She has always been passionate about making, creating, repurposing and growing. The idea to make gin was born whilst studying horticulture and came from the desire to look for a new challenge. Alongside that, came the realisation that she could grow or source all the botanicals here in New Zealand. Gin-making seemed to be the perfect bridge between science and craft. The seed was sown. This brave thinking has led to this exciting venture.
