About Our Gin:

We at Trespass are obsessed with flavour. We strive to produce the most complex, interesting and full-flavoured gin on the planet. Most gins have been ​stripped down to be very juniper dominant, relegating any other botanicals to only a minor contribution, if any at all. We feel that the other botanicals are important for ultra-premium gin as they offer a sweet, rounded and spicy counterpoint to the citrus and pine notes of the juniper berries. We believe the noticeable inclusion of coriander, cassia, black pepper, nutmeg and lavender to Trespass Gin gives it a more balanced and nuanced flavour profile.

 

In addition to our unique botanical blend, our gin starts as premium Marlborough Sauvignon Blanc wine, rather than cheaper grain or whey spirit. We use a pot still to capture more of the wine aromatics, rather than a continuous still which gives a very pure, but very neutral product. We feel the fruitiness, florality and freshness from the wine give Trespass a unique lift not found in other gins.

Finally, we use vacuum distillation to add nuances of citrus peel and cucumber to the core botanicals. This allows us to distill these products at very low temperature, so that their delicate aromatics are not destroyed or dulled by heat during the distillation.

The combination of our unique recipe, ingredients and distillation process yield a gin that is absolutely one-of-a-kind, delicious and unforgettable.
