Limit: One bottle per customer

 

Date of harvest: 17 to 26th. April.

Harvested by hand with extremely strict berry selection, berry by berry.

Sugar level (Brix): 50.5

Alcohol: 8%

Residual sugar: 308 g/l

Total Acidity: 12.9 g/l

Vinification: Crushed by foot, soaked overnight, then pressed, settled for another day with

bentonite. Fermented in used French oak barrels for 19 days.

Date of Bottling: 1. Jul. 2022

Bottles produced: 739 x 375ml

Remarks: Warmer spring. Wetter start of summer was balanced by very dry January,

which led to an expectation of rare combination of quantity and quality.

However, it was met by never-seen-before rain events in usually dry February,

then rescued by relatively dry March. About 80% of the whole crop was left

unpicked after the harvest for dry Riesling. Roughly 20% of these was

painstakingly sorted out, which brought surprising level of sugar and acidity.

This rare level of combination may not be seen too often, hence ‘Gold

Capsule’.
