The White Batavia Arrack from By The Dutch!

Pot distilled from sugar cane molasses on Java after a slow fermentation with wild yeast. Despite its colour, the spirit is aged for between eight and 12 months in old, large teak wooden vats, before it's then blended in Schiedam, Holland. There are heaps of cocktails to be made with this unique spirits, though we rather like the sound of an Arrack Sour.

By The Dutch was set up only recently but it is set up on the great Dutch tradition of top-quality spirit production. Their three spirits are all equally fantastic; Dry Gin, Old Genever, and their Batavia Arrack Rum just as are their complex range of bitters.
