Dos Palmas is a Fino of eight years old (perfectly in the middle between Una Palma and Tres Palmas) and it’s bottled from just two casks (numbers 7 and 26) from the third criadera of a solera of 150 butts. At this stage the layer of flor will have started to thin out and the flavours will have concentrated compared to a younger Fino. However this year the climate was very benificial for the development of flor and significantly more casks were found with an intact layer of flor.

 ABOUT THE PRODUCER

Founded in 1835, González Byass is one of Jerez’s great historic houses, with nearly two centuries of sherry expertise behind it. That long inheritance is felt clearly in the latest Finos Palmas release, where tradition, terroir and cellar knowledge come beautifully into focus.

Shaped by the distinct conditions of recent vintages (2024, 2023), these wines reflect not only the character of the season, but the precision of a house that has spent generations refining the art of biological ageing.

From the saline purity and finesse of Una and Dos Palmas to the layered richness of Tres and the profound, age-worthy depth of Cuatro Palmas, this is Tío Pepe in one of its most articulate and compelling forms.
